From a player's perspective, because the integrity of usernames is important in recognising players. If people change their username, no one knows who's who anymore without having to go and look up previous usernames on a website which is an unnecessary hassle. All those memories you might associate with someone's old username are detached. In our minds, usernames are primary identifiers for players, so they should also be unique identifiers in practice. No one should be forced to remember a long string of random characters that is a UUID. Even if they had used simple integers it would have been much easier, but no, they had to go and make it purposely difficult on everyone.

From an administrative perspective, the server data is much less easily recognisable and harder to work with as player names must be converted into uuids for player files to be edited, restored or processed. Security is also an issue; if people don't exercise the proper precautions to go and look up someone's previous usernames for themselves, people can claim to be anyone and others may believe it. This wasn't possible when everyone knew usernames were unchanging.

Another reason relating to the server data is that username changing requires the conversion of all player files to UUID format, and due to the huge amount of player files on the server, this is not possible. This system is also inefficient as for simple database interactions the UUID must be fetched which sometimes involves querying external mojang servers and adds more unnecessary processing strain.
